This…is different. Wild Bill’s has a kind of Hard Rock Café flavor with a hometown feel…and bikes. LOL. Bikes are the name of the game. When walking through the door, you can’t help but notice the motorcycle hanging above you, or the tables made from hubcaps. Those were pretty cool, actually.

But Wild Bill’s isn’t all about it’s décor. The food is pretty good too. ;) The restaurants brings a little bit of New Orleans to downtown Nashville. I’m a huge fan of beignets straight from the N.O., and these come a close second. The house specialty are the banana beignets covered with caramel or chocolate sauce. YUM! :)

The menu isn’t very extensive, but the food is delish. Try the Fried Fresh Cajun Shrimp platter. It has just enough spice to give it a kick, but not enough to make you tear up from the heat. There’s also a wine bar for those wine lovers out there.

So when you get a chance, check out Wild Bill’s, it’s sure to be a treat.

The most important meal of the day!

Your parents weren’t kidding when they told you that breakfast is the most important meal of the day. It sets the tone for what you’re going to eat for the rest of the day, as well as giving you a significant energy boost.

I’m a firm believer in this. There have been days when I have gone to work without eating breakfast, and I couldn’t focus on my work, at all. I would snack on sugary treats, but that only gives you an energy boost for a short amount of time. I’ve found that even eating a bowl of cereal in the morning will help. If you get hungry before lunch, snack on fruit, carrot sticks, or a Snicker for a kick in the right direction.

Recipe of the Week: Pecan Shortbread Cookies

IG1006 Pecan-Shortbread lgPecan shortbread cookies are my absolute FAVE! I never thought to bake them on my own though. Well, here’s my chance and yours too! How about we all try them and see how they turn out?

Pecan Shortbread Cookies

Ingredients

* 3/4 cup(s) pecans, coarsely chopped
* 1 1/4 stick(s) butter, at room temperature
* 1/2 cup(s) confectioners’ sugar
* 1/2 vanilla bean, split lengthwise seeds scraped
* 1/2 teaspoon(s) pure vanilla extract
* 1/2 teaspoon(s) kosher salt
* 1 1/2 cup(s) all-purpose flour
* 3 tablespoon(s) demerara or turbinado sugar
* 1 large egg yolk, lightly beaten

Directions

  • Preheat the oven to 350 degrees F. Spread the chopped pecans on a rimmed baking sheet and toast for about 6 minutes, until lightly browned and fragrant. Let cool.
  • In the bowl of a standing mixer fitted with the paddle, beat the butter with the confectioners’ sugar, vanilla bean and seeds, vanilla extract, and salt at medium speed until fluffy, about 3 minutes. Add the flour in 3 batches, beating at low speed until just incorporated. Discard the vanilla bean. Stir in the pecans.

Vegan Jalapeno Poppers Recipe

Ingredients:
12 jalapeno peppers, sliced in half lengthwise, tops and seeds removed
8 ounces Tofutti Better Than Cream Cheese vegan cream cheese
1 cup soy milk
1 cup flour
1 cup bread crumbs
Oil for frying

-Fill the jalapeno peppers with the Tofutti Better Than Cream Cheese.
-Put the soy milk and the flour into two separate bowls.

Tropical Mango Smoothie

So grab a blender, run down to your local grocery store, and stock up on these ingredients to make the perfect Tropical Mango Smoothie to give your life a little island flavor!

 

Ingredients

  • 1/2 cup(s) pineapple juice, chilled
  • 1 cup(s) diced mango
  • 1 banana, sliced
  • 2 teaspoon(s) fresh lime juice
  • 1/2 teaspoon(s) grated, peeled fresh ginger
  • 3 ice cubes

Directions

  1. In blender, combine pineapple juice, mango, banana, lime juice, ginger, and ice and blend until mixture is smooth. Pour into 1 tall glass.
